Give These Fresh Recipes A Try

Ranch Cauliflower Chips

Two servings

Ingredients:

  • 1 cup grated parmesan cheese
  • + 1 cup grated raw cauliflower
  • + 1/2 tsp. parsley
  • + 1/2 tsp. basil
  • 
+

  • 1/2 tsp. dill
  • 
+

  • 1/2 tsp. chives
  • + 1/2 tsp. garlic powder
  • + 1/2 tsp. onion powder
  • + 1/2 tsp. pepper
  • 



Directions:

    



  1. 1. Preheat oven to 450 degrees.
  2. 2. Add all ingredients to a bowl and stir.
  3. 3. Line baking sheet or stone with parchment paper.
  4. 4. Place about 1 tbsp. of mixture on prepared baking sheet, about 1” apart and press down gently.
  5. 5. Bake at 450 degrees for 5-7 minutes.
  6. 6. Remove from oven and turn cauliflower chips over. Tip: Flipping the chips can be tricky. If yours are sticking, try letting them cool for a minute, place a second piece of parchment paper on top and a second baking sheet on top of that. Very quickly and carefully flip the entire tray upside down, transferring the chips to the second sheet. Then, slowly peel back the original piece of parchment paper.
  7. 7. Return to oven and bake for another 5-7 minutes.

Shrimp Ceviche

Two serving

Ingredients:

    



  • + 4 oz. shrimp, cooked and chilled
  • + 3 tbsp. lemon or lime juice
  • + 8 oz. tomatoes, diced
  • + 8 oz. cucumber, chopped
  • + 1 tsp. onion powder
  • + 1 clove garlic, crushed and minced
  • + Fresh cilantro, chopped
  • + Dash hot sauce
  • + Salt and pepper to taste
  • 



Directions:

    



  1. 1. Place chilled shrimp in a bowl.
  2. 2. Add lemon, onion powder, garlic and chopped cilantro.
  3. 3. Stir in tomatoes, cucumber and hot sauce.
  4. 4. Chill and marinate the ingredients in the refrigerator.
