One of Union Centre’s newest restaurants, Matt the Miller’s Tavern, shares two recipes for the perfect brunch
Blueberry Basil Limoncello Martini
Whether you’re looking for a place to have Mother’s Day Brunch or plan to create your own, Matt the Miller’s Tavern in West Chester is serving up some tasty treats. Offering an upscale tavern atmosphere, Matt the Miller’s features a chef-driven menu of tavern favorites made from the freshest ingredients available. Originally from Dublin, Ohio, Matt the Miller’s opened its sixth location in West Chester last fall. 1.25 oz. Stoli blueberry vodka
.75 oz. limoncello
.5 oz. simple syrup
.5 oz. lemon juice
2 basil leaves
Combine ingredients, shake and strain into a martini glass. Garnished with fresh blueberries.
4-6 cold, fresh eggs
1 Tbsp. white vinegar
Pinch salt and pepper
Heat 2-3 inches of water and vinegar in a large saucepan or deep skillet to boiling. Adjust heat to keep liquid simmering gently.
Break eggs, one at a time, into custard cup or saucer. Holding dish close to surface, slip egg into water.
Cook eggs until whites are completely set and yolks begin to thicken but are not hard, 3-5 minutes. Don’t stir.
Lift eggs from water with slotted spoon. Drain in spoon or on paper towels. Trim any rouge edges, if desired.
Sprinkle with salt and pepper.
3 oz. pasteurized egg yolks
1/4 cup water
2 Tbsp. fresh lemon juice
1/2 cup firm cold butter, cut into 8 pieces
1/4 tsp. salt
1/8 tsp. Tabasco sauce
Yields about 3/4 cup
Whisk egg yolks, water, lemon juice in small saucepan until blended. Cook over very low heat, stirring constantly, until mixture bubbles at the edges.
Whisk in butter, one piece at a time, until butter is melted and sauce is thickened. Remove from heat immediately.
Whisk in salt, Tabasco and pepper. Serve with eggs atop English muffin.

Happy Hour, Wine Down Wednesday
Enjoy happy hour Monday-Wednesdays 4-7 p.m., Thursdays 4-9 p.m., Fridays 4-7 p.m. at the bar, and Sundays 4-9 p.m. throughout the restaurant. On Wednesdays Matt the Miller’s sells their bottled wines at state minimum pricing, offering great wine at a marked-down price. Additionally, the restaurant’s enomatic wine system gives guests access to high-end wines by the glass and wine flights.
Matt the Miller’s offers private dining accommodations for a wide range of events. For a seated/plated dinner, you can host up to 35 people. A cocktail/mingling event can accommodate 50 people. There is no “fee” for the use of a private room, and guests can customize menu options. TV’s are USB-compatible, so business presentations or photo slideshows are welcome.
